    What makes hair curly?

    Hair is largely made up of a protein called keratin, encoded by a member of intermediate filament protein genes that consist a large multigene family in animals. Keratin is a major structural protein in hair and skin. In human, keratin genes are clustered in the long arm of chromosome 17 (17q). Straight, curly or woolly hair occurs as a consequence of the subtle variations in keratin genes among individuals and races.

    Keratins are proteins, and the primary component of hair, consisting of long chains (polymers) of amino acids. Keratin proteins are in filament shape, and form a structurally supporting network (cytoskeletal structure)around the nucleus of the epidermal cell. Keratins provide structural strengths in hair, nails, the enamel of teeth, feathers, hooves, horny tissues, and epidermal cells. Keratin proteins account for about 90% of the total hair fiber by weight.

    Keratin protein family exist in a variety of subtypes, and some of them are so called "hard" keratins which are water insoluble and difficult to enzymatically break down, and others called "soft" keratin that are water soluble and enzymatically degradable. Hair fiber and other hard tissues made of dead cells are made of hard keratins, while soft keratins make up the structural components inside the living cells.

    Keratins and other proteins contain amino acids including cysteins, which carry highly reactive sulfhydril group (-SH) and are capable of forming disulfide bonds within the polypeptide chain, or between the polypeptide chains. The curliness of hair is determined by the amount of disulfide bonds between the pairs of cysteins in keratin proteins.
